Ingredients
– 60gm Unsalted Butter
– 7gm Stevi0cal Powder
– 50g Plain Yoghurt (Greek Yoghurt works best)
– 1gm Vanilla essence
– 1gm Salt
– 1gm Baking Powder
– 1gm Baking soda.
– 70gm Refined Flour
– 40gm Almond powder
– 45gm Breakfast Oats
– 20gm Cashewnuts chopped.
Ingredients for making 15-20 portions of 30 g.
Directions
Procedure:
- Preheat the oven to 200deg C and sieve the flour, baking powder, baking soda and Salt together and mix it with the almond powder and oats, keep aside.
- In a large bowl, using a spatula cream the butter with Stevi0cal powder till it is softened and continue till it turns slightly creamy in texture and off white in color.
- Mix yogurt and vanilla essence together and combine with the creamed butter mixture, gently fold in little at a time till all the eggs are consumed.
- Mix all the dry ingredients together, fold them in and mix well at slow speed, wrap the bowl with clingwrap and refrigerate the mix for half an hour to set.
How to Bake?
- Spoon out on a papered baking tray using a small/regular ice cream scoop or by rolling into cylinders and cutting into equal weight portions and shape by hand on a parchment-lined tray.
- Place the balls at a distance of three fingers from all sides on the tray, flatten them to make discs.
- Bake at 180deg C for 10-17mins till they have a golden color all over.
- Take out of the oven, Cool on a Cooling rack & serve or store in an air tight container for up to 2-3 days.
